The construction of a socio-technical approach to raise laying hens (Gallus domesticus) in agroecological systems relies on literature review, organic agriculture norms and empirical data collection. This study aims to contribute to this process applying participatory methodologies (e.g. action-research) and systemic approach to the implementation of an agroecological system by a group of small farmers from Santa Catarina State, Brazil. The theoretical and philosophical framework was defined after review of the literature where the relationship between hens and human societies in different historical periods was considered. Conceptual basis of permaculture and natural agriculture were also considered, as well as organic production standards. This study describes and examines the conception, implementation and first results of an associative project designed to produce and process organic eggs. The results are presented from a sociocultural perspective and analyses farmer's attitudes and behaviour during the conversion period. The study illustrates to what extent the choice for a specific methodological approach influences changes at farm level and its neighborhood. Therefore, it highlights the importance to apply bottom-up approach to carry out research on hens husbandry systems. The breeding activity analysis is made based on the system's structure. Hens? multifunctionality and the benefits of plant-animal interaction are the main results observed. Additionally, a field trial evaluating the behaviour of laying hens bred on pasture showed a good performance of commercial breeds. This study suggests that the conversion period should be evaluated using participatory methodologies; that is essential to invest on the training of farmers and their participation on networks; that cooperation and interchange between farmers and consumers is important; and that the impacts of activity on natural resources an welfare of the birds must be monitored. Os atributos geográficos da Região Serrana do estado do Espírito Santo propiciam uma diversidade climática que influencia a qualidade sensorial do café arábica produzido na região. Fatores como elevação e face de exposição solar (soalheira e noruega) são frequentemente relacionados a qualidade da bebida. Este estudo teve como objetivo identificar os atributos geográficos mais relevantes para a qualidade sensorial do café arábica produzido nessa região. Para tanto, foram selecionados e demarcados 64 pontos de amostragem em lavouras de café arábica da variedade Catuaí Vermelho. As amostras de café colhidas foram submetidas a um processamento padrão para obtenção do café ?cereja descascado? e, posteriormente, encaminhadas para a avaliação sensorial, realizada por profissionais credenciados (Q Grader). Os resultados mostram que a Região Serrana do estado do Espírito Santo tem potencial para produção de cafés especiais, e que a elevação é o atributo geográfico mais relevante para qualidade sensorial do café arábica na região estudada, podendo representar um acréscimo de mais de 1 ponto na avaliação sensorial para cada 100 m acrescidos na elevação.
The geographical attributes of the highland region of the state of Espirito Santo provide a climatic diversity that influences the sensory quality of arabica coffee produced in the region. Factors such as elevation and face of sun exposure (sunny and norway) are often related to drink quality. This study aimed to identify the most relevant geographic attributes for the sensory quality of arabica coffee produced in the region. To this end, 64 sampling points were selected and demarcated in Arabica coffee plantations of the Catuai Vermelho variety. The collected coffee samples were submitted to a standard processing to obtain the ?peeled cherry? coffee, and then sent to the sensory evaluation, performed by accredited professionals (Q Grader). The results show that the highland region of the state of Espirito Santo has potential for the production of specialty coffees, and that elevation is the most relevant geographic attribute for sensory quality of arabica coffee in the studied region, it may represent an increase of more than 1 point in the sensory evaluation for each 100 m plus elevation.
